Maple-Walnut Pancakes For Two

These were dessert tonight 😀

My belly is still smiling from all of the pancakey goodness. Dairy-free pancakes are one of those things that make skeptics give you their best “Omg this is VEGAN?!!” face.

 

Maple-Walnut Pancakes For Two

What you need:

1 1/4 cups flour
2 tsp baking powder
1 tbsp brown sugar
1 cup rice milk
2 tbsp canola oil
1 tbsp pure maple syrup
1/4 cup walnuts, finely chopped
pinch of cinnamon

To serve:
One banana, sliced
Extra maple syrup

What to do:

Preheat oven to 130 C – put a dinner plate in there, ready to keep cooked pancakes warm while others are still in the pan.

Sift flour, baking powder and cinnamon into a bowl. In a seperate bowl, whisk together the milk, oil, maple syrup and brown sugar.

Slowly add the liquid mix to the dry, stirring to combine as you go. Don’t worry if there are a few little lumps, it’ll all work out!

Add walnuts to batter and mix well.

Add one portion of batter to a lightly greased medium-hot fying pan, and gently spread out into an even circle. Cook until the whole surface begins to bubble, then flip the pancake and cook for a minute more. Place in oven to keep warm. Repeat until batter is finished.

Serve up your pancakes with sliced banana and a river of pure maple syrup.

Makes 4 pancakes.
