Tis the season for salads spiked with summer fruit.

SUMMER SALAD WITH MAPLE-SOY LEMON DRESSING
For each serving:
- a handful of mixed lettuce leaves, torn into bite size pieces
- 1/4 cup grated carrot
- 1 tbsp whole almonds (raw or lightly toasted)
- small handful fresh strawberries, sliced
- small handful fresh mint, torn
- 1/4 avocado, diced
To make dressing (makes approx 4 servings – scale up or down as needed):
- 2 tbsp olive oil
- juice of 2 lemons
- 2 tbsp maple syrup
- 1 tsp tamari soy sauce
To serve:
Combine lettuce, carrot, almonds, strawberries and mint. Divide into separate bowls. Top with avocado.
Add all dressing ingredients to a lidded jar, shake until well combined. Drizzle over each salad serving.
