Summer Salad with Maple-Soy Lemon Dressing


Tis the season for salads spiked with summer fruit.


For each serving:

  • a handful of mixed lettuce leaves, torn into bite size pieces
  • 1/4 cup grated carrot
  • 1 tbsp whole almonds (raw or lightly toasted)
  • small handful fresh strawberries, sliced
  • small handful fresh mint, torn
  • 1/4 avocado, diced

To make dressing (makes approx 4 servings – scale up or down as needed):

  • 2 tbsp olive oil
  • juice of 2 lemons
  • 2 tbsp maple syrup
  • 1 tsp tamari soy sauce

To serve:

Combine lettuce, carrot, almonds, strawberries and mint. Divide into separate bowls. Top with avocado.

Add all dressing ingredients to a lidded jar, shake until well combined. Drizzle over each salad serving.
