This is a tweaked version of the Banana Bread recipe in How It All Vegan by Sarah Kramer and Tanya Barnard. I just added LSA and switched up the flour arrangement a little. LSA is awesome for a bunch of reasons: it is packed full of fibre, is a protein boost and – when you use it without heating it – is also a source of Omega 3 & 6 fatty acids. Pow!
Bananas and dates might sound boring, but embrace your inner tea lady and give it a go. You’ll be coming back for thirds, guaranteed!
Sweet Banana Date Loaf
What you need:
3 ripe bananas
1 tbsp lemon juice
1/2 cup canola oil
1/2 cup raw sugar
3/4 cup chopped dates
1 cup all purpose flour
1/2 cup wholemeal wheat flour
1/2 cup LSA mix*
1/2 tsp baking powder
1/2 tsp baking soda
What to do:
Preheat oven to 190 C.
Sift the flours, baking powder and baking soda into a large bowl. Add LSA and mix it in with a fork.
In a small bowl, mash the bananas with a fork until very mushy. Add the lemon juice, oil, sugar and dates and mix well.
Add the banana mixture to the flour mixture in a few batches, stirring until just mixed. The mixture should be nice and thick.
Spoon into a lightly oiled loaf pan and bake for 35 – 45 minutes, until an inserted knife comes out clean.
Makes one loaf.
* A blend of ground linseed, almond and sunflower seeds; LSA is usually in the baking stuff section of a supermarket. It’s one of those awesome multi-purpose, basic wholefoods that becomes a pantry staple once you get a good handle on what you can do with it.
