Lissa’s Simple Cumin-Spiked Rice

Lissa’s Simple Cumin-Spiked Rice

What you need:

1/2 cup brown rice*
1/2 400g can chopped tomatoes**
2/3 cup peas
1/2 brown onion, finely chipped
2 tsp olive oil
1 tsp cumin seeds
1/2 tsp cumin
1/2 tsp ground coriander
sea salt & fresh black pepper to taste

What to do:

Cook rice according to packet instructions. Set aside when done.

Heat oil briefly in frying pan, over medium heat. Add cumin seeds and cook, stirring frequently, for 1 minute. Add onion and cook 2-3 minutes, stirring occasionally, until translucent. Add peas, cumin and ground coriander. Mix well and cook for 2 minutes, stirring frequently.

Add tomatoes, and season to taste with sea salt and fresh black pepper. Reduce heat, cover and simmer for about 5 minutes, stirring occasionally, until sauce reduces and thickens. Remove from heat and add cooked rice, mixing well.

Serves 2

* use whatever you prefer; jasmine rice is rad, and long grain white works just fine too
** I know in some countries you can buy 200g cans of chopped toms; if you can get hold of such things, perfect! Use one o’ those instead
