Pasta, pasta, pasta. I have been rediscovering my love recently. This is another simple pasta recipe that is a great weeknighter. Easy, fast and flavour-packed; just how you want it after a long day.
I threw this together as a side dish for dinner tonight, when I had simultaneous garlic and pasta cravings. This is definitely one for garlic lovers! Reduce the garlic to one clove if you aren’t as much of a massive fan as I am 🙂
Whatever Pasta & Thick Garlic-Tomato Sauce
What you need:
A full 3/4 cup of dried pasta of your choice (I am a big fan of fusilli right now; the tight spirals hug sauce deliciously well)
For the sauce:
1 tbsp olive oil
2 large cloves garlic, crushed
1/2 tsp raw sugar
1 cup canned chopped tomatoes
2 tsp tomato paste
1/4 tsp dried basil
1/4 tsp dried oregano
1/8 tsp sea salt
fresh black pepper to taste
What to do:
Heat olive oil briefly in a medium-hot frying pan. Add garlic and cook, stirring constantly, for 30 seconds. Add basil and oregano. Mix well. Add tomatoes, tomato paste and raw sugar. Mix well and turn up heat slightly. Simmer, stirring occasionally, until sauce reduces and begins to thicken, about 5 minutes. Reduce heat to medium-low, and add sea salt and fresh black pepper. Continue cooking, stirring frequently, until sauce is very, very thick, 5-10 minutes. Cover and set aside when done.
In a large saucepan, cook pasta your preferred way. When done, drain well. Away from heat, add the sauce and gently mix with a fork until pasta is evenly coated. Serve immediately.
Serves 1 (or 2 as a side dish).
