I was craving something a little tomatoey creamy for lunch today, and this little experiment worked out fucking delish, if I do say so myself. It is also super easy and superpowered!
Feeling Zombified Easy As Hell Creamy Tomato Rice
What you need:
1/2 cup rice
1 tbsp olive oil
2 cloves garlic, crushed*
1/2 small onion, chopped finely
1 tbsp pumpkin seeds
4 medium button mushrooms, sliced
1 small zucchini, sliced
1/2 of a 400g (14oz) can of chopped tomatoes (just eyeball it – it’ll work out)
1/4 tsp sea salt
1/2 tsp balsamic vinegar
1 tsp hulled tahini
2 tsp rice milk
What to do:
Cook rice your preferred way, drain well and set aside, covered.
Heat oil briefly in a medium-hot frying pan, add garlic and cook 1 minute, stirring frequently. Add onion and cook a few minutes, until transluscent. Add pumpkin seeds and cook a couple more minutes, stirring regularly. Add zucchini and mushrooms, cooking until zucchini begins to soften.
Add tomatoes and salt. Mix well. Reduce heat and cook 5 minutes, stirring occasionally.
While the veges are doin’ their thing, quickly whisk together the vinegar, tahini and rice milk in a small bowl. Add the tahini mixture to the pan. Mix well.
Add rice, mix with veges and serve it up.
Serves 1-2
* crush your own garlic – you don’t want that nasty tasting pre-made stuff. Pre-crushed garlic is a ruiner!
