Confession time: this is a green smoothie. If you’ve never experienced the magic, you’ll probably be raising an eyebrow right now. Fair enough. I had never put green leaves in a smoothie before this and to be honest I was skeptical as hell. This is a green smoothie for green smoothie deniers! You really can’t taste the spinach. It’s a thick, chocolately smoothie with a big raspberry kick that just happens to be packed full of greens.
This smoothie was inspired by the Chocolate Covered Blues Smoothie from Somer at Vedged Out. It is an awesome example of how easy it is to get the nutrients you need* on a wholefoods based vegan diet. Check it out:
Protein
What I need every day: 46g
Percentage of RDI in the smoothie: 40%
Where from? Soy milk, LSA, spinach, cocoa
Calcium
What I need every day: 1000mg
Percentage of RDI in the smoothie: 59%
Where from? Calcium fortified soy milk, spinach
Iron
What I need every day: 18mg
Percentage of RDI in the smoothie: 28%
Where from? Spinach, raspberries, cocoa
Fibre
What I need every day: 25g
Percentage of RDI in the smoothie: 59%
Where from? Raspberries, cocoa, LSA
Over 40% of my protein RDI, well over 50% of the calcium and fibre, and more than one quarter of the iron I need. Not to mention omegas 3, 6 and 9 from the LSA, potassium and magnesium from the pure maple syrup.
All that in a liquid breakfast. BOOM. Easy.
Black Forest Super Smoothie
Ingredients:
1 packed cup baby spinach
1 1/2 cups frozen raspberries
1 1/2 cups soy milk
1-2 tbsp cocoa powder
2 tbsp LSA (or ground flaxseed)
1 tbsp pure maple syrup
What to do:
Add ingredients to blender in the order listed. Blend until very well combined.
Makes one big-ass serving, or a tall glass for two.
